Chef Boyardee...that's me!

I decided that since I recently posted a cooking failure--I would now post a cooking MASTERPIECE. Yes, it has finally happened, I have achieved greatness in the world of cooking. Rachel Ray step over, Mandi is in the hizouse. Today, Bryce and I decided to attempt to make roast, mashed potatoes, and gravy. This was pretty daunting since I seem to mess up on most things that are important. Well, anyway, I tried my darndest and following my Mom's instructions and out came the most amazing dinner of all time. It was so amazing that we even decided to take pictures of it! Truthfully, I think it was one of those wonderful beginner's luck moments, but I am very happy it happened since fast Sunday was taking its toll today and we really needed something tasty.

Bryce is the mashed potato king at our house. He always makes them just right, today was no different.

Although this is a hideous picture of me, I wanted to post the beauty of the meal. Can you tell we were a little too excited about our first Sunday meal success? :)
Now, onto something more exciting than mashed potatoes, gravy, and roast. It's beginning to look a lot like Christmas and I could not be more excited! We drove up to Salt Lake yesterday in the Snow for a Lindquist family party and could not resist the urge to go spend some time at the Gateway. Well, I couldn't resist. We had so much fun shopping in the snow and Bryce was the ultimate husband, pretending like he really did care about everything I tried on or showed him in each store. We went to Ben's Cookies (shout out to Ansie and Beeks :)) and had some fabulous cookies and hot chocolate to make the day even better. Annie, have you ever had the orange chocolate cookie? It's divine! So, to say the least, we loved the new snow. We woke up at 7 yesterday morning and opened all our windows just to look at it. I just realized today that there are only 23 days until Christmas and only 18 more days until KOREA! Tonight we decided to fulfill a Burton tradition and go look at Christmas lights with Amy Grant Christmas blaring in the background. South Provo definitely didn't offer much excitement, but we did find some treasures and we took a few fun videos for my Mom and Dad and Brynne's sake so that they wouldn't miss out on the lights. Enjoy!
It's SNOW Korea!

A few fancy lights in South Provo--a Christmas miracle!

Last but not least, a musical snack.

Oh, how fun to see you back and blogging! I'm so glad that your roast meal turned out so great. I didn't even make my first roast until like a month ago so you're way ahead of me (I just sounded like Mom, huh?). And, loved the vids and the shout-out. South Provo is a treasure trove of lights. :) Love you guys. Let's get together before you go to Korea.

If you and Annie don't get together before you come to Korea, I'll block the plane so you can't come. You have 16 days to get that act together...so do it. Just kidding. I know Annie is prego and has a little tot and you're real busy with the school children so that makes sense but...really..work on it. I'm with AK though. Great blog. Loved every minute of the vids and the hot cup of cocoa. Of course you and Bryce remember all the words to that song hahah. That is why we love you both so much. Keep livin' the Utah Christmas dream. Love you so much and can't wait to see you!!
